Aunt Kitty’s Spaghetti & Nonnie’s Garlic Bread
Y’all when I tell you this would hands down be my all time favorite recipe from my childhood…..My Aunt Kitty’s Spaghetti (the creator of the beloved Aunt Kitty’s Salad) coupled with my mom’s garlic bread is quite literally to die for. Birthday’s, Celebrations of any and all kinds, visits home from college, holidays….T H I S spaghetti and garlic bread are my family’s requests each and every time. So it should come as no surprise this was my 46th bday wish….coupled with a recreation of my 4 year old pig bday cake. Don’t ask me how but I not only have such a vivid memory of this, but Nonnie SAVED the magazine clipping with the recipe!?!? Figured with all of the above, this meal needed its own blog post. Oh and fun fact, this recipe is passed down to Aunt Kitty from her Sicilian father–so you know it’s damn delicious.
Aunt Kitty’s Spaghetti
Olive oil
3 yellow onions
6 cloves of garlic Saute the above and set aside in a small bowl then brown your sausage (out of casing)
2lbs sausage (1 mild, 1 sweet) brown, crumble, and drain
Then add all of the above and add the below into a pot
Small package of mushrooms (don’t saute)
2 large cans of italian crushed tomatoes
1 large can of tomato paste
1 large can (use the tomato paste can) of water
3 tblsp salt
Pepper (after all of the above is mixed sprinkle the top layer with pepper)
STIR
Layer Italian Seasoning
STIR
Layer Italian Seasoning yet again
STIR
Simmer for 3 hours and serve over fave pasta.
Nonnie’s Garlic Bread
6 cloves of garlic peel and crush and heat with a stick of butter over stovetop
Cool the above and mix in 1 cup of mayonnaise and 1 cup of parmesan. Let sit.
Cut a baguette/italian bread lengthwise and smear a (very) thick layer of garlic bread mixture on baguette and put the two sides of bread back together. Wrap tightly in tin foil. Bake 20 mins at 350. After the bread bakes for 20 mins, unwrap the loaf, separate the 2 halves, place mixture side up and broil until golden and bubbly—-word to the wise WATCH THE BREAD—it will bubble Q U I C K L Y!!!! Slice and soak up all that delicious Aunt Kitty Sauce!
