Green Monster Muffins Recipe
What’s better than tricking your kids into eating healthy?! NADA... These tasty green monster muffins are equally as delicious as they are healthy. Adding baby spinach to your baked treats not only makes the color a fun hue for your littles (...or you) B U T is also a sneaky way to incorporate in healthy ingredients too! Recipe below...
Ingredients:
coconut oil, for the muffin tin
protein pancake mix (you can also add vanilla protein powder to regular mix)
1 egg (or sub with applesauce)
banana
spinach
chocolate chips
pinch of baking powder
cinnamon
Preheat oven to 350 degrees and grease a mini muffin tin with coconut oil. In a blender, add the pancake mix and liquid (according to the package directions for one batch of batter). Add 1 banana, a handful of spinach, and a dash of cinnamon and baking powder. Blend until smooth. Pour the batter into prepared muffin cups and top each muffin with mini chocolate chips. Bake for 15 mins, until the edged are golden brown.
