Quinoa Stuffed Bell Peppers Recipe

Ingredients for your Quinoa Stuffed Bell Pepers
4 Bell Peppers
Quinoa
1/2 Pound Ground Turkey
1/2 Pound Ground Sirloin
Taco Seasoning
Toppings (optional): Black Beans, Salsa Verde, Feta Cheese, Greek Yogurt, Chili Lime Seasoning, Tortilla Chips.
Preheat oven to 425 degrees and line a baking sheet (or dish) with foil. Prepare peppers by slicing off the tops and scooping out the guts. Set aside. Prepare quinoa according to package directions. In a skillet over medium heat, brown turkey and beef. Season with taco seasoning. Add cooked quinoa to the ground meat mixture. Stir to combine. Spoon an equal amount of the meat mixture into each pepper and place them on a baking sheet. Bake peppers for 25 minutes. While peppers are backing, heat black beans. Remove peppers from the oven and top with black beans, salsa, feta cheese, greek yogurt, and a dash of chili lime.
Serve your quinoa stuffed bell peppers with tortilla chips on the side.
