Mexican Style Sweet Potato Recipe
You can bake these taters if you have an hour, but if you're against the clock, you can also microwave everything, and it's just as delish!
Ingredient List for your Mexican Style Sweet Potato:
Sweet Potato
Coconut Oil
Corn
Black Beans
Avocado
Chili Lime Seasoning
Jalapeños
Greek Yogurt
Wash tater and rub with coconut oil. Stab all over with a fork and microwave for 10 minutes. Drain corn and beans, season with chili lime, and heat in the microwave. Chop avocado and season with chili lime. Chop jalapeños. Slice tater down the middle. Top with beans, corn, avocado, a dollop of greek yogurt, jalapeños, and an extra dish of chili lime. Beth's Tip: if you feel like you need butter for your Mexican style sweet potato, try a little coconut oil.
