Fresh and light, but chocked full of delish delight...
Ingredient List for your Parmesan Crusted Salmon:
Large Salmon Fillet
Olive Oil
Panko Bread Crumbs
Everything Bagel Seasoning
Parmesan Cheese, finely grated
Preheat over to 425 degrees and line a baking sheet with foil. Cut Salmon into 6-8 ounce portions (about a hand-width). Place salmon on the baking sheet, skin side down, and rub with olive oil. In a small bowl, mix generous palmfuls of panko, bagel seasoning, and parm. Pour breadcrumb mixture evenly over the salmon to create a crust, patting it down until the top of each fillet is covered. Pop salmon in the oven for about 15 minutes until the crust is golden and the salmon flakes easily with a fork. Build your own bowl: serve your parmesan crusted salmon with All Day Everyday Arugula. Voila!
Beth's Tip: 2 pounds of salmon will be approximately 4 fillets.
